Thanks Cram of mushroom 3 tablespoons butter 3 tablespoons flour 1/2 teaspoon salt 1/8 teaspoon pepper 1 tablespoon dried onion 1/8 teaspoon dried parsley 1/8 teaspoon basil 1/4 teaspoon thyme 2 cups safe milk Melt butter in a sauce pan over low heat. Add flour, salt, pepper, onion, parsley, basil and thyme. Next gradually add milk. Bring to a boil. Boil on medium-low for 2 minutes.

Should be able to easily drop this to 2 tablespoons soy butter or even canola oil. That's not much fat for this whole recipe. Also, I don't see the mushrooms in your recipe?
There's also a cream of mushroom/celery soup sub recipe in the tuna casserole recipe here http://www.helpforibs.com/news/newsletter/tunacasserole013003.html
