I cannot use applesauce cause I am a fructose malabsorber. What do I use instead of applesauce when I want to make breads and cakes from Heathers book?

Most any other kind of fruit or even veggie puree (like zucchini or canned pumpkin) would work. Key it to the recipe you're making - if it's banana bread, use extra mashed banana. For many chocolate recipes, date puree works well.
Not sure what fruits would work best for you for the fructose issue, but in general any fruit pureee will work as a sub for applesauce in baking.

Would you sub it equally? I.E.: 1/2 cup of pumpkin pureee for 1/2 cup butter or for 1/2 cup oil? Not sure what fruits would work best for you for the fructose issue, but in general any fruit pureee will work as a sub for applesauce in baking.
