Soy milk works awesome for cooked pudding, but I have never gotten instant pudding to set with it. I bring a little lunchbox container of soy milk and cook pudding with when I camp and make a yummy dessert with a little chocolate.

I've had good success with instant pudding and almond milk. Although, I have to not use the full amount of milk-- I just add it in gradually until it's the right consistancy. Rice milk just made a soupy mess, but almond milk was incredible!:)
