buttermilk/soy milk in recipes

I was wondering if Lactaid milk can be substituted for the buttermilk and soy that I see in these recipes? If so, would I need to anything to it (like vinegar) to give it the same taste?

You can clabber soy milk as a buttermilk sub. I believe it's 1TB apple cider vinegar to a cup of soy milk.

But can I use Lactaid milk in place of soy or buttermilk? If so, do I have to add the vinegar to that also?

I think you'd still have to add the vinegar to Lactaid milk.
Not sure how it would affect the flavor if you didn't.

However, if you're strictly following the IBS diet, the Lactaid milk would be a no-no anyway.

as it is still dairy and an IBS trigger. Use soy or rice milk instead, and sour them with a little vinegar.

as weird as this may sound, I haven't had too many triggers with the Lactaid milk. I cook/bake with it all the time and use it in my cereal. I've even taken a lacaid pill with it at times and still don't have any problems. Weird !

How well does Almond milk do in recipes? I use them in my smoothies but haven't used to them cook...

I haven't tried cooking with the Almond milk yet. I would interested in knowing if it makes a difference in how it tastes.

I've cooked with almond milk and I never noticed a difference in how it tastes. I think it works well. I always buy what's on sale that week either soy milk or almond milk. I think they both work well.
