IBS friendly cauliflower recipe

I had good luck eating cauliflower this way this weekend. I took the original South Beach "mashed potato" recipe and modified it to be IBS friendly. Here you go!

4 cups cauliflower florets (fresh or frozen)
1 TBSP Earth Balance spread
2 TBSP soy milk (original flavor)
salt and pepper to taste
soy parmesan cheese to taste (optional)

Cook (steam/boil) the cauliflower until soft. Place in food processor with other ingredients and puree until smooth.

I bet this would be good as a warm dip on toasted bread or safe crackers!
