Heather - Canola oil...

Heather, I see you use canola oil quite a lot in your recipes. This doesn't seem to be a commonly used oil in the UK; I was wondering if there is another type of oil I could use as an alternative - what about a 'light' olive oil (ie without the strong flavour of extra-virgin), or would this not give the same results??

Yep, no problem. You can use safflower oil, sunflower oil, soybean oil, or the light olive oil.

Heather, I have also noticed that Canola oil has a lot of fat in it. Shouldn't we be a bit weary of this?

Hi - All oils are fats, and fats are oils. Same thing. For IBS, you need a low fat diet, but this does NOT mean fat free. It does mean that the fats you eat - about 20-25% of your total calorie intake every day - need to be heart healthy. Canola oil is a good choice, as is olive oil, finely ground nuts, fatty fish, and flax oil.

You can tolerate healthy fats if you eat them in smaller quantities with a high soluble fiber base. In other words, baking banana bread or making a fried rice with a bit of canola oil is just fine - deep frying something in it is not.
