Does anyone have a recipe, or suggestions for something that could substitute for Cream of mushroom soup in a casserole? There is this vegetable and stuffing casserole I made with my holiday dinner last year that was sooooo good I vowed to make it a yearly tradition... now I can't eat it.

Hmmm... so would I use one package of silken tofu to replace the can of soup? Or tofu AND soy milk?

I have used Imagine brand Cream of Mushroom soup in the green bean casserole for Thanksgiving. However I add cornstarch and water mix to it to thicken it up since it can be a bit soupy. The Imagine brand can be found in the health food section of Kroger's. It is completely safe to use. It does make your casserole a bit darker in color but no one complained at Thanksgiving. It still tasted yummy!

I used imagine for thanksgiving as well. I actually did not add anything to it to make it thicker and it worked out really well. Everyone ate it and it tasted great. My sister even asked me to make it for her this weekend for her and a few friends for dinner.
