I am going to make the 5 minute pumpkin pie recipe for thanksgiving. I always use Almond milk because I can not tolerate too much soy milk. My problem is that my mother is allergic to nuts. Can I use water in its place? Or will the small amount of soy milk used in the pie be alright for me?

If you can't have soy and your mom can't have nuts try lite coconut milk. Do not use water. I make a pumpkin/tofu pie but that wouldn't be safe for you.

What about oat milk? There's also rice milk, but I think that might be too watery.

Thank you for the response. I actually can eat soy and tofu just in smaller quantities. I used to use soy milk in my cereal but it became too much and was giving me extra gas. Do you think that the 1 1/2 cups is a small enough amout throughout the entire pie that if I would eat a piece or so would not give me much of a problem?

I would probably eat half the pie and still get too much soy milk LOL.

instead of the soy milk, and see how that works. Haven't tried it yet, but it should work....probably!

I personally think rice milk is too sweet and watery. I am not a fan.

I don't think I would drink rice milk but hopefully you wont taste the difference in the pie. I just took it out of the oven and it smells fantastic and looks good so hopefully tomorrow when we eat it, it tastes just as good. I will let you know!

I used rice milk to make the pumpkin pie and it turned out AMAZING. You couldn't taste the difference and the pie tasted fantastic, just like store bought but healthier and IBS friendly. My entire family loved it and my sister actually had seconds. There is only one piece left! I will definitely make this recipe again. Thanks Heather
