Chewy Chocolate Oatmeal Cookies

1c. soy milk
1/2 c. liquid butter subsitute like I can't believe it's not butter spray
1/2 c. brown sugar
1/2 c. cocoa
2 c. quick cooking oats
In pot bring butter, sugar, milk, cocoa to a boil, stir constantly til blended. Remove from heat. Add oats, stir til thick about 15-20min. Spoon cookies on non stick cookie sheet. Chill overnight til firm.
1g of fiber per cookie

I Can't Believe It's Not Butter: The main two ingredients are hydroginated soybean oil and buttermilk cream!!! Both very, very bad for IBS...

Just wanted ya'll to know...

I'm sorry I thought I can't believe it's not butter was ok to have because I thought someone posted up a recipe with that in it. I used a generic Canadain vegan soy butter melted, for the cookies. They turned out ok. Since alot of people are from the U.S. here and I can't believe it's not butter subsitute spray is in the U.S. I thought I'd post that up since I got my vegan soy butter at a Canadian store. Won't happen again.

Don't worry about it! Someone had posted one of SharonMello's recipes with "I Can't Believe It's Not Butter" which made me look twice too. The best part about the boards, though, is that we're all learning.

Hmm...I thought that the SPRAY was ok, just not the tub kind. I don't think that the spray has all the junk in it...but I could be wrong.

sorry! not a big deal at all! i just wanted everyone to know that ICBINB is dairy and oil based...

the cookies sound yummy -- i think melted soy garden would be a good sub. for the ICBINB spray...
