chex mix question for Heather

Heather,
I found the traditional chex mix recipe and used the canola oil instead of the butter. Since the oil and worchestershire don't mix well, some cereal got lots of flavor, and some got none. Do you think it would work to use Sprectrum or soy butter instead of the oil, or would that add too much fat?

Hi - I'd guess that using Soy Garden would work better than the canola oil - I just don't usually have it on hand. I've found using the canola oil that I have to really rapidly whisk the liquid the whole time I'm pouring it onto the chex mix, to try and evenly cover things. Otherwise you will get a weird distribution. The Soy Garden will probably take care of this - if you try it let me know.

The fat content will be the same - canola oil is pure fat, and so is Soy Garden.

Would Spectrum be the same, and should I use 4 T? The recipe itself called for 6T, but that seemed kind of high. On the other hand, the batch I made was really dry.

Hi - I haven't used Spectrum by melting it. The label says it's not meant for frying so I kinda assumed it wouldn't melt well. You could microwave it and see...I just figured the Soy Garden would melt better.

Also, 6 T should be fine. There's a LOT of cereal in a batch of that stuff, so that's really not much fat once it's distributed throughout the whole recipe.

Speaking from personal experience here--Spectrum won't melt. I mean, you're welcome to try, but it pretty much stays solid. Soy Garden/Earth Balance (made by the same company) perform much more like "real" margarine.
