Heather, do you have a recipe for pizza? I crave it something terrible, more than anything else I've had to give up. I don't eat meat, I'm allergic to pork (no pepperoni please!), and I can't eat dairy (no cheese, thank you!), so what does that leave me? I found soy parmesan and soy mozzarella, but what do I do about the strong acidic pizza sauce, not to mention all that SALT? HELP!

Hi Bev - there are several pizza recipes in Eating for IBS. You can also check the recipe archive here - I think there are quite a few ideas. You can always just lightly brush the crust (make fresh from the EFI recipe, or use the dough they sell in most grocery store deli departments) with a bit of olive oil and omit the red sauce. Then add roasted veggies, shredded chicken breasts, shrimp, shredded fresh herbs like basil or cilantro (mix and match these in whatever combo appeals to you). Top with a little shredded soy or rice cheese, bake, and eat - yummy! The only salt will be what you add, so that's no problem.

Bev, I just recently discovered a new product... acid reduced pasta sauce! Personally, my body deals okay with the acidity of tomato sauces, but it's certainly something to look at! Here's the webpage:

Thank you both. I confess I missed your pizza recipes in your book, Heather, but I have now found them and they sound great; I'll give 'em a try. The D'gesta sauce is the perfect solution for my acid problem -- thanks, Kree! Yummm.

Amy's Soy Pizza is out of this world! Give it a try... you can find it in your frozen (organic) section. It is good topped w/ fresh veggies or turkey pepperoni...

It is not very saucy or salty -- maybe it will sit well in your tummy...

Do you find that the fat content (11g for 4.3oz) or the dairy protein bothers you? I'd really like to try these, but am afraid of those factors.

Hi - that fat content is actually really reasonable. 11 grams of fat equals 99 calories, so that's about 1 tablespoon of fat in the whole portion. You should be getting a good soluble fiber basis from the crust too.

The trace amounts of casein (the dairy protein) in soy and rice cheeses don't bother most folks with IBS at all. BUT - there are some people who are exceptions, so just pay attention as you eat this. Odds are good you'll do just fine.

Are all those turkey substitutes ok? I thought the high fat content would mean they would bother us. Not that I can get them here anyway but I am curious. Like turkey bacon....

How are you calculating the fat? By the grams or by the percentage of calories from fat? I was told to stick to foods that are less than 30% calories from fat. Most of the turkey stuff I've found is way above that. Even the turkey bacon was 50%.

Really? Wow, I've never seen turkey bacons or such with more than 10-20% of the calories from fat. I'll have to check what brands these are - I actually prefer the soy bacons and such so I haven't bought the turkey version in a while.

You might check health food store brands - their versions tend to be lower fat (and have lots fewer additive/preservatives) than grocery store brands.

I am so glad you found it -- and that you like it! I am glad it is just soy cheese, because I can add veggies or low fat turkey pepperoni to it to change it up... Also, I like to dip it in tomato sauce... yummy... as tomotoes don't bother me at all...

on my pizza tonight. I pureed some roasted red pepper with a clove of garlic and this was my pizza sauce. Topped with some chopped canned quartered artichoke hearts and a few diced black olives. Seasoned it with a little basil and when it came out of the oven a sprinkle of soy parm. Oh man! My mouth is watering just remembering it!! LOL

I'd have to put it on a wheat free crust, but that's ok with me...I've made rice ones and alt. flour ones and they suffice.

I get soooo hungry for pizza. The artichoke crowns are ok, but any part of the leaves at the heart, no matter how tender, I just have a phobia against. It's like getting a tuff piece of canned asparagus..........yuck.

LOL - I know what you mean about the tuff ones. Actually, if my knife has any trouble going through it from being tough, it goes in the garbage. Usually the canned ones are pretty tender though.

Mags, how many red peppers does it take for one pizza? You pureed them with garlic, but nothing else, no oil? In the blender? I've heard of roasting them in the oven, but I've never heard of pureeing them in a blender. I'm gonna give this a try since tomato sauce does a number on my tummy. I hate artichokes, but I love black olives. Fresh basil, oh YEAH! This will be better than garden worms. Bev

They were already roasted in the oven, then I pureed them. You can roast your own, or use jar/canned. I use canned, because I found a brand that makes a big can of them for a decent price. I just make a personal size pizza (my fiance and I each make our own so we can each have our own topping). I probably used about 2 whole peppers or so. I used one clove of garlic. No oil. This is something really flexible, because if you make too much sauce, you can just save some for next time! I pureed mine in a mini-prep food processor thingy. I don't have a real food processor yet - going to add that to my registry! But, blender should work just fine. And I used dried basil, because we didn't have any fresh, and chopped up about 3-4 black olives, and just sprinkled them on.

Actually, I got the idea about pureeing the roasted red peppers from Turkey and Roasted Red Pepper Pasta.

I'm think I'm going to try this with some grilled chicken too. I think that would be really good! Or maybe even cooked ground chicken or turkey.

Hope it comes out tastier than worms! Let me know how it went if you try it.

Hey Mags! Good info. I'm going grocery shopping today and I'll look for the canned variety. BTW, this reminds me of a recipe I got from a gal up in Canada who made me some incredible roasted pepper soup. She said she waits 'till the peppers are in season, then roasts a million of 'em, using a special pan that she keeps for just this purpose (because the roasting process ruins the pans). Unfortunately, the soup has cream in it so I couldn't eat any of it except for a little taste, but I imagine you can use soy milk instead. I might just have to try to find this recipe and post it. Meanwhile, I'm into pizza right now -- EH?!? Bev.

the recipe here Italian Crostini with Honey-Tomato Sauce & Saffron Prawns could easily be made with roasted red peppers instead of tomatoes in the sauce. I used to actually make this with half tomatoes, half red peppers, and it was great. I'd bet it would be terrific with all peppers, no tomatoes as well.

Red Pepper Soup new

I finally found the recipe but discovered it wasn't cream that was the bad guy but BUTTER! Nevertheless, here it is:

RED PEPPER SOUP:
6 sweet red peppers (never green peppers)
1/2 cup butter or margarine
2 medium onions
4 teaspoons curry
5 cups (or more) chicken stock

ROAST red peppers at 450-degrees until charred BLACK (20 mins. or so). Transfer to rack and LET COOL. Pull out insides and stems. Should peel easily. Melt butter in pan. Add onions and saute. Throw in peppers (whole or pieces); saute 5 minutes. Add curry. Cook on low 5 minutes. Add stock and simmer, covered, for 10 minutes. Puree.

Note: this is incredible soup. We need a substitute for the butter, obviously! Heather? Shanna? Mags? HELP!

If I was making it, I'd probably try 2 T of olive oil or Soy Garden to replace the butter.

Great idea, Mags. Yeah, it is good soup. Expensive, though, unless you make it when peppers are in season. And, by the way, if you like soup, check out the Lentil Soup With Sausage that I posted here a few days ago. That's really incredible! Everyone I've given it to has asked for the recipe. And, even though it has tomatoes in it, it doesn't bother my tummy (I think because there aren't that many tomatoes).

Speaking of Soy Gardens, I can't find it -- of course -- so it's going on my list for the health food store tomorrow. I tried "Veggie Butter," but YUK!

Oh, and when you put the food processor on your wedding list, be sure to specify Cuisinart. I have TWO! They're fantastic. Go for the bigger bowl! And when's the wedding?

I plan on trying the lentil soup too - I bought some lentils awhile ago, and haven't figured out what to do with them! LOL I wanted to make Heather's dip, but after I bought them, I found out red lentils & lentils were 2 different things, so these lentils have been hanging out for awhile. I plan on trying them in the soup eventually.

Every time I've seen Soy Garden at a grocery store, it's always been with the fruits & veggies where they have the soy cheeses. Don't know if that would help you or not.

Thanks for the tip on the food processor. I've been trying to figure out which one to get - there's so many it's so overwhelming! I've never used one before either, so that makes it worse. I was looking at some on epinions.com. My mini-prep is by Cuisinart, and I also have their handheld blender. And their ice cream maker! I've been very happy with their products so far. The big day is 10/8/04. Can't wait! 299 days to go!

I have found I can eat at Pizza Hut!! I order the chicken veggie lovers pizza, with the veggie cheese on either the thin crust, or hand tossed and it is really good and does not bother the tummy at all. I feel like I am cheating, but I'm NOT!! Makes me happy. I can order it delivered on a Friday nite when my husband is doing his bowling league with the guys thing, and I get a chick flick for me and a pizza, and life is truly good....:)

Well I found a way to enjoy pizza at a pizza party.
I was at a round table pizza yesterday and I order a special personal pizza with only grilled chicken/ mushrooms/zucchinni no sauce on a thin crust. It was delicious and not even a bit dry. It's the first time I have had pizza in 8 months. So when your out ask them to personalze for you , if they serve veggie pizza they have a varity of IBS safe food to top it. Oh ya! next time I having some shrimp on mine.

LOL yeah I posted this earlier, but it wasn't too popular then. It's kind of expensive-8.99 for a medium. But my mom usually get half plain cheese for me and half veggie for her. The cheese really does taste good! And there's hardly any tomato sauce on it, so the acid thing shouldn't be a problem! Thanks for re-posting marjo!!

I'm pretty sure we won't get the veggie cheese in my area for quite some time, if then. Rural Midwest isn't really on the cutting edge of things, if you know what I mean. But, I haven't stopped eating at Pizza Hut. I just order the personal Pan Pizza, Veggie Lovers and ask them to hold the cheese. It's really good. And, the sauce doesn't bother me any.........maybe I'm just lucky on that count. I really don't miss the cheese at all! Give it a try sometime.

I saw canned crab and shrimp at the store yeasturday
and it didn't have any fat in it at all. I bet that
would be good on pizza.

I can't imagine pizza with no cheese or sauce.

Mags - I just had to let you know that I tried this last night. Used a homemade dough and pureed some raosted red peppers with a clove of garlic for the sauce. Topped it with some chicken, black olives and onions. It was FABULOUS!! It is my new favorite pizza - and I am a pizza freak! I didn't miss the cheese one bit!!!

I have had pizza on the brain all day - went out at lunch and purchased a crust. I find that soy cheese clumps/sticks together when I have had it on a frozen pizza. Other than not using it - does anyone have any suggestions of what I could mix with it to smooth it out a bit? (hope this makes sense...) Am concerned that rice cheese will constipate me..:) Anne

if you check their website- under allergy info- ALL OF THEIR CRUSTS CONTAIN DAIRY! every single item on their menu has dairy listed as in it or a possile contaminant... but the crusts all include it!!!! I vaguely recalled that from working their years ago so checked.
