Ultimate Non-Dairy Chocolate Pudding

I can't believe I forgot to share this until now! I make this often, because it's easy and so yummy. It's so creamy I think it tastes more like a mousse!

Ultimate Non-Dairy Chocolate Pudding
(Makes 3-4 servings)

1 1/2 cups crumbled silken tofu (I use Mori-Nu)
1/3 cup sugar or pure maple syrup or honey
1/4 cup unsweetened cocoa powder
1 1/2 teaspoons vanilla extract
1 tiny pinch salt

1. Place all ingredients in a blender or food processor fitted with a metal blade.
2. Process until smooth, creamy, and thick.
3. Chill until ready to serve.
4. Enjoy!

This sounds yummy -- but it sounds like it makes a fairly small amount. If I was making it for a family of four... would I want to double or triple it?

Oh yeah, I forgot to mention that it makes 3-4 serving. I'll edit that in, thanks. I've never tried doubling or tripling it, but I don't see why it wouldn't work!

wow! thanks, kree. i'll have to try it some time. you know, with the maple syrup, it is vegan friendly too!

I've never noticed cocoa powder bothering me, bev. As a matter of fact, I'm pretty sure Heather has said it's perfectly safe. I wonder why it would bother you? Maybe the small amount of caffeine? Hmm. Hopefully someone else has a better reason for you...

Chocolate in any form can affect upper GI problems like reflux and heartburn. For IBS, it tends to be just the fat in chocolate that causes problems, so cocoa powder (which is super low fat) is usually very tolerable. But, as Karin says, there are always folks who are exceptions (and that's where carob can come in )

I love cocoa powder! I am constantly mixing it in my yogurt. I know it has a lot of dietary fiber -- 4 g / T -- is this soluble? Just wondering... )
