Crunchy Lemon Muffins - A winner!

The recent newsletter recipe for "Crunchy Lemon Muffins" came just in time to utilize my surplus of lemons! (One of the benefits of living in the Valley of the Sun -- citrus trees everywhere!) And let me tell you, these are yummy! My muffins didn't turn out so 'crunchy', but they were definitely moist and sweet-tart and deeeelicious! They were a big hit among my co-workers.

I love your little muffin pan! Are those mini-muffins or the standard size? I think I am going to make these muffins for a potluck on Monday.

They were mini-muffins. I splurged a while back and bought the "NordicWare Platinum Series Bundt Brownie Pan." It comes with 12 half-cup servings that are so cute! They make muffin making that much more fun, hehe. Clean-up = not so fun!

Hehe, you'll have to let us know if they are It could be how I baked it -- I cut off the "tops" to make a smooth bottom for my bundt-lettes, and gave those to my boyfriend. He may have unknowingly consumed the crunchy part

I tasted one about 10 minutes after it came out of the oven. For me it was more "pound-cakey" but the flavor was excellent. The tops of my muffins didn't brown either but the rest of the muffins were nice and brown.

My friends are anxiously awaiting this dinner...I will probably make more for my family tomorrow.

I tried the recipe, too, but mine didn't turn out very well. I'm pretty sure I followed the directions exactly. The muffins came out very dense and had very little taste. Also, the topping made them sticky. I was disappointed, since I usually love Heather's baking recipes!

Mine were pound-cakey too, which I didn't mind. I wonder how Heather got the crunchy texture?

Are these muffins supposed to be light and airy or pound-cakey? I didn't get the crunchy either.

The flavor is divine but not sure about the texture....

Mine have a more poundcake texture than light and fluffy muffin texture - I really like it, though. I've had the tops come out crunchy sometimes and moist/chewy other times. Don't know what makes the difference - I've wondered if it's a weather change, humidity, something like that. But I've loved them both ways.

that I didn't botch the recipe! My tops came out very light and the part that touched the pan came out nice and brown. I didn't get the crunch either...it will be interesting to know how they come out this winter when it isn't quite so humid.

Good stuff! I will be making them again!

Just made these. I agree, mine weren't crunchy, but that coulda been because I didn't wait for the sugar/lemon juice mixture to cool. They were yummy! I think I might add more grated lemon to the lemon/sugar mixture. Mine coulda been more lemon-y. Great recommendation!

I have been making these since Kerrie (KinOZ) posted them a long time ago and we love them. We never wait for them to cool. The girls love them and we eat them warm and usually finish all of them lol.

double the recipe and used two whole eggs (yolks not a huge issue especially when split amongst 24 muffins!)and cooked them an extra minute or two and they came out wonderfully! I also used the zest of three lemons(remember I doubled the recipe) and think it was an improvement.

I am not a huge "lemon" person but these muffins are awesome!

I made these and they didn't quite come out like I expected. They seem thick and dense and I think I need more zest in the batter. I am disappointed because I really was craving these!

I used 1.5 times the zest called for in the recipe. These have a poundcake like texture as opposed to say a blueberry muffin.

I subsituted whole egg for the egg whites because a little bit of yolk won't bother me and preferred them that way. I wouldn't do that unless you know it won't hurt you.

I think it also depends on the size of the lemons you use. My zest from one lemon can be twice as much as yours! I used HUGE lemons, so mine were very lemon-y.

Also, I always tend to add an extra teaspoon or two of zest in all my baking recipes, because I always like more zest-y flavor than the recipes tend to call for. I think the measurements are approximations anyway - teaspoons are kind of arbitrary. Use taste as a guide Hehe, I usually have a teensy taste of the batter before I bake it (you know, in case I forget some major ingredient like sugar, which I did just last week!) and that's also when you can play with adding more zest.

I doubled the batch of muffins and used the zest of three huge lemons. I would have used more but I was tired of grating!

You know I tasted another one and it wasn't as bad as the first. In fact the top was a bit crunchy. I think that I didn't let it cool long enough before I ate the first one. It still does need more lemon in the batter so I'll try that the next time. Thanks for the info!

not to mention I needed to use the rest of my lemons! They are so low in fat and the sugar content is lower than most non-safe recipes I use so I will be making these regularly!

Anyone know how they might freeze?

I made these and they were very moist but not crunchy. I ended up putting them in the toaster oven for a couple of minutes to make the top more crunchy. I wonder if this would work with oranges instead of lemons?

I am the only one in the family though...more for me! They go bad before I can eat the whole batch though!

These don't bother my tummy a bit and actually...they are filling enough that I lost weight when I was eating them every day!
