This sounds really good ... but what would you suggest as a wine substitute?

You don't have to substitute the wine it's OK! When wine is cooked the alcohol cooks out of the food.

Thank you for answering, and I understand that the wine cooks out of the food ... but I just will not buy alcohol or keep it in the house. I am alcohol and drug free since May 1979, and years ago that took some effort, now it is just my practice.

I was really just wondering if there was some particular item that would be best to substitute for the wine in this recipe.

Can you use non-alcoholic wine? If you can, that would work. -nt- new

As a culinary student I am positive that you can sub really any acidic component instead of the wine. It is important that you sub it and don't leave it out or it will taste different. I would suggest either white wine vinegar or red wine vinegar with a touch of sugar added, or some worchester sauce and tomato sauce. Itis your preference!!! HTH!!!
