I made this for the IBS cookie/sliced breads recipe exchange this last weekend and this was a big hit!! It is kind of like a pound cake....very yummy!! Shane has DEMANDED that I make more to take home with us for Christmas. Oh, I sliced it and wrapped them in red & green plastic wrap...looked festive and keeps them from drying out. ENJOY!
Eggnog Quick Bread
1 - 9x5 inch loaf.
INGREDIENTS:
1/2 cup egg beater or 4 egg whites, beaten (equivalent of 2 eggs)
1 cup Silk Nog (soy eggnog)
2 teaspoons rum flavored extract
1 cup white sugar
1/2 teaspoon vanilla extract
1/2 cup applesauce
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Pray bottom only of a 9x5 inch loaf pan, or three 3x5 inch loaf pans with nonstick cooking spray.
2. Blend together the eggs, eggnog, rum extract, sugar, vanilla and applesauce.
3. Sift together the flour, baking powder, salt and nutmeg. Add to eggnog mixture and stir just enough to moisten; pour into prepared pan.
4. Bake bread in 9x5 inch pan for 40 to 60 minutes, or until a tester inserted in the center comes out clean. Breads baked in the smaller pans require 35 to 40 minutes. Cool for 10 minutes, and remove from pan. Cool completely on wire rack, wrap tightly and store in refrigerator.
This eggnog bread would be good sprinkled with confectioners' sugar just before serving.

Mmm this looks so good, Shelley! I think I'm going to try baking it this weekend (if I can find some time).
I finally tried the Silk Egg Nog and it was so good! I had never had egg nog before so I luckily have no experience to compare it to the real stuff.
Ooh maybe I'll make this for my New Year's trip to my friend's cabin. I want to bake a lot of yummy goodies to bring up.

Get a three pack of the disposable loaf pans at the grocery store... (they are a little smaller then 9x5).... double the recipe...it makes 3 perfect ones!! And NO clean up!!

I took a few loafs of this to Enterprise, OR for Christmas with Shane's Family..... not only was it a big hit with the 5 year old who would RUN to the container every time he came over to both Grandma's (cuz I took it to both)... but Shane's step Mom and Sister In-law also asked for the recipe and Shane's Bother said, "Screw the recipe.....just bake it and send it to me!!"

I made these also for Christmas parties. I took it to my aunts last weekend and everyone liked it. I also took a loaf for Christmas Eve to my in-laws and they really liked it. THis is one to remember for next year!!

I have to admit, as yummy as this sounds I haven't made it...I don't do soy and have never seen a rice based egg nog, and am, frankly too lazy to make my own. However since I've adapted a good number of regular recipes to make them gluten free, here is what I'd do:
Eggnog Quick Bread
1 - 9x5 inch loaf. try making in a couple smaller pans first, or even a 9" or 8" square cake pan instead of a loaf pan. Some GF quick breads are notorious for either not wanting to rise in a large loaf pan or sinking in the middle when they cool.
INGREDIENTS: 1/2 cup egg beater or 4 egg whites, beaten (equivalent of 2 eggs) 1 cup Silk Nog (soy eggnog) 2 teaspoons rum flavored extract 1 cup white sugar 1/2 teaspoon vanilla extract 1/2 cup applesauce This is going to sound strange, I know, but I'd replace some of the applesauce with oil, using 1/4 cup oil, and 1/4 cup applesauce. You need some oil/fat to bind to the alternative flours. Applesauce just won't cut it and the loaf will get very soggy at the bottom. 2 1/4 cups all-purpose flour Use a good commercial GF blend (nothing with any bean flour in it please) or your own blend, and start with LESS, say 1 3/4 cup at first...add a T. or 2 as you are mixing until the loaf gets the consistency you want. All alternative flours respond to liquid a little differently so a lot will depend on the blend you use. I've learned that the GF dough/batter needs to be a little stiffer than that when you use wheat flour. Add 2 t. Xanthan gum 2 teaspoons baking powder 1/2 teaspoon salt 1/4 teaspoon ground nutmeg You may have to adjust your baking times so watch the the loaf carefully while it's baking.

Of course, it probably helped that I used Jamaican Appleton rum instead of rum extract:) I think I'll be baking LOTS of this during the next month or two. I'm amazed at how yummy the Silk Nog is; I had never tried it before, and was wondering what I was going to do without my egg nog this year. Egg Nog is one of my favorite things about the holiday season!!

I liked it, but hubby and son didn't. My Dh thought the texture was too spongy...

was it still warm or cooled when they tried it? Just wondering..... all my family members loved it...... no mater what... but the texture does change after it cools....it's really more of a pound cake feeling once cooled, not light like a banana bread would be.

I was very excited about this, but had terrible results using my normal gluten-free flour mix. It was gummy and nasty and took nearly 2 hours to cook. I have yet to have a gluten-free baked item come out edible since switching to the EFI diet.

Is there anything that I can use in place of the applesauce? I'm trying to try a new item (in this case eggs) one at a time and if I used the applesauce and had a flare up I wouldn't know if it was the eggs or applesauce that did it to me. Any help would be great.

I made a loaf last night and the "crust" came out extremely chewy. It tastes OK, though! The center was dense, and the outside was like rubber. I followed the recipe, I swear!

Mine came out the same way - very dense and spongy, with a chewy crust. It TASTES incredible though!
I think I will make another loaf after Christmas and try using one whole egg and 2 egg whites, rather than 4 whites. One yolk contains 5 grams of fat, but if you divided into 12 slices, the fat would increase by less than half a gram per slice.

My husband made 2 large loaves for me to take to Thanksgiving dinner. It was really good and most that tried it liked it. My littlest (5) ate it for snack and breakfast for 3 days. It seems that my diet change has been a great benefit to her as well. She is Lactose intolerant and now we are armed with recipes that she can safely and painlessly eat. Thank you for your help, and your recipes.
I was diagnosed with IBSC in 11/1999 after a colonoscopy, but was told there was nothing i could do to help it. Spastic colon... I just had it and there was not a cure for it. But going back I have had this since I was a young child. I am grateful very grateful for all the info and the new found relief I am experiencing.

UUUmmmmm..... Shane went and fetched me some SilkNog at the store after it started snowing and we are expecting major winds that could cause power to go out.... so, I got mine in the oven right away.... they are cooling now!
I doubled the recipe and got a three pack of disposable foil pans.... it make three perfect ones...(just like I did in the picture the first year I made them).... bake 50-65 mins....follow all directions the same.
