pork & scalloped potato casserole

INGREDIENTS:
2 tablespoons olive oil margarine
1 tablespoon olive oil
1/2 teaspoons salt
1/4 to 1/2 teaspoon ground black pepper
3 tablespoons all-purpose flour
2 cups chicken broth
3 pork chops
4 thinly sliced large new potatoes
1 dash paprika
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In sauce pan melt margarine over medium heat. Add salt, pepper and flour**. Pour in the chicken broth, cook and stir until mixture boils. Remove from heat and set aside.
In skillet brown pork chops in 1 tablespoon olive oil. Grease a cooking dish with Pam or olive oil and layer potatoes. Pour mixture over potatoes and place browned chops on top. Sprinkle paprika on top.
Cover and bake for 1 hour. Uncover and bake for an additional 30 minutes.

**I added chopped onion, cumin and garlic to the broth mixture for some extra zing!

Pork is one of the first items on the trigger foods list - as such, it should be avoided. Please do familiarize yourself with the IBS diet guidelines before posting recipes. You might be able to eat it safely (and that's wonderful for you! ), but most of us have to avoid that, and it's confusing for new people when unsafe recipes make their way in here.

That said... hmm, think it could be made with chicken breasts instead? Or maybe turkey ham? Hmm...

By the way, welcome to the boards! Please don't take my comments the wrong way - we love new faces, especially over here on the recipe boards! I hope you'll keep on posting!

Actually, according to the list of trigger foods I got from this site, pork is not mentioned as a trigger food, only red meat and dark poultry meat. Pork is a white meat, and very lean if you cut the fat off.

Actually (and unfortunately), pork is listed as a trigger food.

From the IBS Trigger Food List :

"Red meat (ground beef, hamburgers, hot dogs, steaks, roast beef, pastrami, salami, bologna, pepperoni, corned beef, ham, bacon, sausage, pork chops, and anything else that comes from cows, pigs, sheep, goats, deer, etc. )"

Red meat, pork included, has proteins which are difficult to digest. Red meat is any meat that is red or dark in color before cooking or any meat that comes from mammals.

Well, I do apologize... it isn't mentioned on the list I have printed out. I'm sure chicken could substitute, you'd just have to cook it well before adding it. At least I know now that pork isn't a trigger for me.

Now I just have to experiment with chocolate! I don't think I could stand not ever having chocolate!

Hi there!!!

Heather (when completely stable) has a bite of choc daily. (She mentions this in her book).

Note: Completely she is completely stable before she will do this!!

So there IS hope.

I think your recipe would be great with chicken!

I'm able to have chocolate, as long as it's dairy-free and LF. I use cocoa powder in recipes, which is on the IBS safe list, and I am able to eat Chocolate Peppermint Stick Luna Bars. Good luck with your experiments! I know how you feel: I need my chocolate too!
