I made the Old Fasioned banana creme pie for my daughters 3rd birthday today. My family loved it. Everyone except my other daughter who has a high gag reflex on anything thick, she did like eating a little bit of it. Anyway, my 3 year old wanted two pieces and when I was cleaning off the table she put her fingers in it and took another big scoop off the top. ! I will be making it again. Thank you.

Angela,

I've made it too and it was great!

Crust
8 graham crackers, finely crushed
I T canola oil

Preheat oven to 325. Lightly spray pyrex pie dish with cooking oil. Mix ingred. together and press firmly into pan. Bake 4-5 mins and cool on rack.

Filling

2 firm ripe bananas
1/3 cup brown sugar
1/2 cup flour
1/2 t salt
2 cups vanilla soy milk
5 egg whites, beaten intil frothy
I T vanilla

Thinly slice bananas onto baked crust. In large heavy double boiler whisk together sugar, flour and salt. Whisk in milk and scrape around sides with rubber spatula as necessary and set pan over boiling water. Cook until mixture thickens, about 10 minutes, whisking constantly. Remove from heat and carefully whisk several large spoonfuls of hot pudding into the egg whites to temper them. Add the egg mixture back to the pan of pudding and whisk well to thouroughly blend. return the pan to the heat and whisk until thickened. Remove from heat and add vanilla. Pour pudding over bananas into crust. Smooth top and chill.

I used the chocolate variation where you add 1/3 cup unsweetened cocoa and 1 T of gran. sugar to dry ingred and 1 T of cocoa to crust ingred before baking.

I usually make the chocolate one too. This time I decided to try the banana and it was so much better than I expected. I may have to make it for Easter lunch. My sister-in-law likes banana creme pie, I want to see what she thinks.

I've actually been playing around using the EFI vanilla pudding recipe for the banana creme filling, and I really like that. The chocolate pudding version works too. I think I like the flavor better when the thickener is corn starch instead of flour.

I made the chocolate version of the banana cream pie today...words just cannot describe! It was SOOOOOO good! We had company for dinner & we all had some after dinner, and everyone just sat there eating & making sounds of pleasure the whole time--not just the first bite! LOL

My boyfriend announced it wasn't bad for you & one guy told him to be quiet so he wouldn't ruin it for him--he wanted to believe it was unhealthy! LOL
