Question about Double Decker Sweet Potato Pecan Pie

Has anyone made Heather's Double Decker Sweet Potato Pecan Pie? If so, do you have an estimate of how many sweet potatoes it took you to get 2 1/2 cups mashed? I'm thinking of making this for Thanksgiving and want to make sure I get enough!

Yep, I've made it and have gotten raves on it - make sure you look on this site for the corrections since it does take longer than what's printed in EFI.

It sorta depends on the size of your sweet potatoes: for normal-sized ones, it was maybe 3? Not that having extra mashed sweet potatoes in the fridge is a bad thing....

I cheated before and used canned sweet potatoes. It worked.

I have 5 large sized sweet potatoes on the stove right now. I will let you know how much "mashed" it yields. I need to make two pies that call for 2.5 cups mashed sweet potatoes. I hope I have enough!

2 large potatoes yielded three 2.5-3 cups for me. 2 lrg or 3 med should do it.~nt~ new

Hi Everyone! I know it's been forever since I have posted (only the oldtimers will probably remember me at all!), which means I have been doing pretty well :grin: With Thanksgiving coming, my brother and his wife are looking to make Double Decker Sweet Potato Pecan Pie (I gave them the recipe a few years ago, and that's the treat they always make me!), but they are frustrated that it "NEVER bakes in the middle.. even if you bake it for hours.." Any ideas or suggestions you have are most appreciated. I may have to make one (never have had to!) and see what I can figure out.

Hi - have them check their oven temperature with an oven thermometer to make sure the temp is right. Also make sure they're using the correct size pan.

And, for this recipe, it will continue to set up in the center after it's removed from the oven and cools down. As long as a butter knife inserted into the center comes out pretty clean, the pie is done. It will be a bit gooey when served but shouldn't be liquid.
