You were so right!! The reason my Peppermint Fudge Cake was coming out so dry and burn on the bottom is because my oven is really 50 degrees hotter then the dial says!! I just preheated the oven to bake My Great-Great-Grandmother's Chocolate Applesauce Cake (page 110-111 in Eating for IBS)..... I'm so glad I got that thermometer....or I would have burned these too!! I need to find out about mine. I used to have to crank it up 25 degrees and it would still take more time. Now I can't figure it out. It does both now.
