I would like to make caramel sauce, surely there is a way to make it

I do believe this is possible, but I haven't played around with things enough to have a successful recipe. I have had disastrous results with replacing cream in caramel sauce recipes with soy milk. But those are "wet" caramel sauces - there are "dry" caramel sauces where you simply melt granulated sugar. That should be IBS safe. You might check epicurious.com for a recipe like this and see what you think.

I believe you can also buy fat free caramel sundae sauces that might do the trick...

This is the recipe for caramel that I used to make on caramel corn. I've subbed out the regular butter for veggie butter.

1/4 c brown sugar, packed
2T corn syrup
1T veggie butter
1/8 t baking soda

Mix sugar, corn syrup and butter a pan over medium heat until well dissolved. Let simmer for 2-3 minutes (until bubbles reach the center) and then remove from heat. Add baking soda and stir briskly. Caramel will turn from dark brown color to a lighter tan shade. Careful to not burn the mixture while it's heating up.

Pour over hull-less popcorn. So freaking good!!!!
