I've found lots of recipes for low fat stuffing, but when you stuff the turkey, does the fat from the turkey cooking soak the "low fat" stuffing, thus making it high fat?

Hi - Yes, this can happen. Partly it depends on how much stuffing there is, and how big the turkey. The more stuffing in the cavity, the less this will be a problem. And if the stuffing is very low fat to begin with, that's good too.
Easier still, just double the stuffing and bake some in the bird for folks who like that, but bake the rest alongside in a casserole dish for those who need it to stay as low fat as possible.
