If not, what can I do with several wonderful home grown cukes a neighbor gave me yesterday? I've only been on H's diet for 3 weeks and am still being very careful in regards to any insoluble fiber b/c I'm still dealing with stabilizing my colon after many years of severe constipation. So, I'm afraid to eat these raw even if I peel and dice them. Should I be? However, I'm only just starting to stabilize on H's diet so I'm still avoiding any raw fruits and vegies other than in smoothies. So, I'd still love to know if cukes CAN be cooked. It seems to me like cukes would be able to be diced and sauteed. Yes??? No??? I've seen them in Thai sweet and sour stir fries with other veggies, and they're good.
