What kinds of soy and rice milk will make pudding mix set up? I have used 8th cont and Silk but with no luck. Does anyone know the brands that work? I want to make one of those cool whip kind of pies (even though it has HFCS- I just can't avoid cool whip!)

How about adding a little extra corn starch to the instant pudding mix? Does corn starch need to be heated to work? It could help with the thickening.

I was wondering that too! I made a the vanilla wafer with bananas and pudding the other week and my pudding didn't set well. I wonder if the cornstarch would work?

In the back of my mind I recall trying cornstarch last time with no success but this might be an illusion, dream, imagination whatever.

in order to thicken a liquid.

I haven't actually tried pudding mixes so I don't know what the glitch is here. For homemade puddings thickened with cornstarch I've never had a problem with Vitasoy or Pacific brands, or with the bulk fresh soy milk from Asian markets.

isn't it used as a thickener in breads? Not sure if that would work in pudding though. Just a thought.
