Will's creamy lemon rice pudding

Does it definitely have to be SHORT grain white rice? Can it be long? brown?

I've used long grain before and it was fine - just not as pudding-y, the rice kept its texture a bit more.

Do you know if jasmine or basmati rice are long or short? I have both at home and I'm having a very bad day so thought that I'd finally try making this pudding tonight but have no energy to go shopping on way home.

It will only really work with short grain, as it has a higher starch content and will lend creaminess to the pudding. Please do a search on this, as it has been asked before and Heather responded.

I THINK jasmine is short, no idea about basmati. I looked around on the internet for a bit but didn't find much. Maybe you'll have better luck, or maybe someone else knows.

to tell. When you cook them up, if the rice is sticky, that's short grain. If the grains are separate, they're long grain. Get yourself any kind of white rice that's good for sushi - it will make the best puddingy by far! Calrose is a good brand.
