Eggplant Hummus

A friend who had the Smoky Eggplant Hummus at my house today said she thought this would be even better without the chickpeas. She said she makes a hummus with roasted eggplant, garlic and onion. Has anyone else made it this way? Would it still be IBS-safe?

Hi - This sounds like baba ganouj, a Middle Eastern roasted eggplant dip. Technically, hummus is always made with chickpeas, so if you omit them you'd have something else. But, whatever you call it, it would still taste great! If you try just an eggplant version, you can whisk in a little drained plain soy yogurt for extra body and creaminess.
