soft peaks with egg whites

Hi, I'm trying to make the chocolate cookies in the recipe book but I'm having one problem. I can't get the egg whites to form soft peaks when I beat them. I've tried to beat them with a hand beater and an electric mixer and nothing! Has anyone got any tips? I want some cookies man!

Hi - if your egg whites won't whip into peaks, the odds are there are traces of fat in there. Either a bit of yolk got into the whites, or you're using a plastic bowl that has traces of oil on it, or the beaters weren't 100% clean and had a bit of oil on them. You'll have an easier time with an electric hand mixer - start at low speed till the eggs are foamy, then switch to high speed. Should have soft peaks in just 1-2 minutes.
