Hi - They're a US product, basically pasteurized egg whites with a little natural yellow coloring so they look like regular eggs. They're sold in refrigerated cartons, usually right next to the regular eggs. I'm not sure if they're available outside the US. They're a convenient way to cook with just egg whites if you don't like having to separate whites from yolks in regular eggs.

Heather, is there a difference between egg replacers and Egg Beaters (egg whites)? I've noticed that some recipes that call for egg relpacers AND egg whites so I'm confused now.

Geez, I don't know. I've assumed that recipes that call for egg replacers mean Egg Beaters. I wonder if Egg Beaters beat up into meringue the way regular egg whites do - my guess is they don't, though I could certainly be wrong. If this is the case, though, then a recipe might call for both so you could whip the egg whites into peaks, and then use Egg Beaters for what would normally be the amount of egg yolks called for.

Anyone else know about this?
