Questions about hummus, fish sauce, italian bread crumbs

Anyone have a good flavourful recipe for Hummus? I am stepping out of my comfort zone here. I love stuff with peppers, garlic, onion, spinach. Any suggestions?
Second, what is a good substitute for Fish Sauce? I don't like fishy tastes at all. Would Hoisin sauce do? I love that.
Does anyone have a recipe for make your own Italian Bread crumbs? The store bought kinds all insist on adding parmesan.

I bought French bread and it got really stale so I put it in the food processor and but the crumbs in the freezer. You can probable add some Italian seasoning to the crumbs and I think they usually have parmesan cheese in them so add some soy parmesan cheese. I put it in the freezer because I figured it didn't have preservatives and would keep longer. Hope this helps.

HanSolo - I would add dried thyme, oregano, basil (or get the Italian seasoning already mixed together) to the breadcrumbs. Why can't you use soy parmesan in it? Then it would have to be refrigerated. Let me know if you make it.

Ah, and here I thought I'd converted you!

Try light Thai soy sauce instead, or Thai mushroom flavored soy sauce diluted with a little water.

Have you tried Oyster Sce? It's yummy but much thicker so I usually add some extra water.

Let me preface by saying I haven't tried this hummus recipe BUT it sounded good or I wouldn't have typed it up to begin with.

Hummus Sylvia

1 1/2 cups drained canned chickpeas
3 garlic cloves
1/2 teaspoon salt
Dash of tamari
Juice of 2 lemons
3/4 cup tahini
1/4 cup packed minced parsley
1/4 cup minced scallions
Black pepper
Dash of cayenne pepper

In the food processor, mash the chickpeas into a thick paste. Incorporate all of the remaining ingredients. Chill. Taste and correct seasoning if necessary.
