Main Dishes - Thai Fried Rice with Cilantro and Shrimp, Mustard Dill Salmon, Jamaican Chicken with ginger peach chutney, fettucine with creamy butternut squash sce

HI- I pretty new to the board, but so far LOVE the Dreamy rice pudding, the zucchini bread, eggplant hummus and most of all the chocolate applesauce cake/bread. I think I'm addicted to it! Looking forward to trying lots more recipes. Also made the german potato salad listed in Heather's newsletter and it was yummy!

I'm just starting to try the recipes, but so far my favorites are the Banana-berry Smoothie, Will's Dreamy Rice Pudding, Honey Glazed Snack Mix, and Sweet Tequila Lime Chicken.

I made the chicken recipe the other night and both me and my roommate absolutely loved it!

Mags, do you have an ice-cream maker? I'd love to try making this but don't have one. Do you think it would be possible to just freeze it?

Yes, I got one for Christmas last year. I love it!

There's only one way to find out if just freezing it will work...go for it! I think it may turn out like an Italian water ice. Then again, maybe like a popsicle?

But, all it takes is zest & juice of 4 lemons, 2 c sugar, & 2 c water (I just made some last night so it's fresh in my mind. LOL). It so easy to whip up, I think it would be worth a try. Let us know how it goes.

Hey! How are you? I usually check in daily, but sometimes just look around. I am actually not too bad, thanks! I had a spell over the weekend that I came to find out was PMS related...which was good in a way, since I was "sans" period since March. The herbs and supplements are really helping. I hope that you are doing well also. Have a good one!

Good to hear from you...and good to hear you're doing well!

I also didn't get my period for AGES! I think it was 10 months. I'm glad you finally got yours. I hope it wasn't too too bad!

I'm finally doing it. I'm going to a nutritionist on Monday! I'll have to let you know how it goes...wish me luck!

What herbs are you taking that are helping?

Have a great weekend!!!

*hugs*

Good for you on going to a nutritionist. I was helped immensely! I have been taking 500mg 2x a day of both Evening Primrose Oil and Chaste Berry (Sometimes called Vitex or Agnus Castus.) It took me about a month from beginning the herbs to onset of my cycle, but it has been quite a relief. I feel much better knowing that I could balance myself out naturally. I also eat 2T of ground flax a day which is a natural phytoestrogen and helps us ladies in many ways.

Please let us know how your trip to the nutritionist goes. I'll be thinking of you.

Take care,

Christianne

I made strawberry sorbet and just froze it and it was wonderful! If you stir it up after about 6 hours or so, just as it starts to freeze it will be smoother! Than let it freeze overnight and enjoy!

Hi,
here some of my favourite recipes:

Beverages:
strawberry banana smoothie

Appetizers:
Honey glazed snack mix

Breakfasts:
Blueberry pecan french toast (with strawberry's and cashew nuts)
Blueberry brown sugar scottisch oatmeal (with apple, pear or peach)

Breads:
simple sweet cornbread
grandmothers chocolate applesauce cake
sweet cinnamon zucchini bread

Side dishes:
Sweet cardamom and current indian rice
crunchy skillet browned garlic new potatoes

Salades:
Italian tomato bread salad with basil

Soups:
haven't made one yet

Main dishes:
spaghetti with spanish almond romesco sauce (with cashew nuts)
Jamaican chicken with ginger peach chutney

Desserts:
Mandarin chocolate sponge cake with sweet orange icing

I recently found soy cheese, been looking for a long time, but got a tip from a friend and finally found it! I am so glad and I'm eating some every day, delicious!

I would love to make some of the puddings, they seemed delicious but haven't found all the ingredients yet. The rose or sushi rice for instance, it's named different here so have to go on searching. Can I make it with jasmin rice or does it really have to be rose rice?

Thanks, it's real nice to read all of your favourite recipes!
Ciao! Natasja

Can you find any rice that is small? That is what the rose or sushi rice is. I think I tried it with the jasmine rice and it wasn't starchy enough to make the pudding thick, plus I am sure it would give it a different taste.

Hi - What you're looking for is short grain sticky rice or sushi rice. Short grain sweet white rice will also work. Any brand will do, doesn't have to be rose. Try a health food store that sells rice in bulk, or an Asian market. Or, your local grocery store in the ethnic section - they'll almost certainly have bags of Asian short grain rice (like Calrose).

Best,
H

Thanks for the tips, I have been to some places were they sell lots of rice, what I see is mostly long-grained, so I know that that's not the one, but with this information maybe I get a little further! I'm gonna do a search on the internet, maybe something's coming up then!
Thank you and ciao!

If you eat nuts carefully, they are okay. Chopping them up reduces their insoluble fiber, and then you can have a few with a soluble fiber base and it makes them okay.
