Just thought I would let you all know the calories for Heather's Banana Mango Breakfast Pudding since I figured it out for myself (I plan to make it this weekend)

PER SERVING (using vanila soy): 289 calories

even though the FDA requires that fibers be labeled as carbs, and given the same calorie count as carbs (4 per gram), your body doesn't actually digest fiber so the carbohydrates, and the calories, are not absorbed.

So, you're not actually adding any calories to your diet with the Acacia or any other fiber!

Thanks, Heather. I've been wondering about that for a while now! On the package it says 20 cals/serving, but doing the math it should only be about 2 (or less, something like that). Thanks again!

This pudding turned out SO yummy! It tastes a little like Will's rice pudding in Heather's book, but has an added zing of mango and peaches.

Here are the changes I did:

- I discovered I only had regular soy milk so I used that and added 3 caps full of vanilla extract

- Used 1/2 bag of frozen mangos instead of fresh

- Used 2 bananas instead of one becuase I was too lazy and just ripped off big chunks instead of cutting it so I wanted more bananas

Even Mike liked it - which was surprising since the main ingredient was soy milk! He said biting into the mangos in the pudding was a fun surprise because it's like a flavor boost.
