Thanks for the recipe. I had found several that were fat free but all called for lots of dairy like buttermilk. I appreciate the info that I can substitute rice or soy milk for the dairy. I'll assume that I can use the same amount of rice/soy milk as the recipe calls for regular milk. Hope this will work. Looking forward to trying these!

you can clabber (sour) soy milk. Just add 1 T of vinegar (apple cider or white) to 1 cup soy milk. Stir and let stand a few minutes. It will thicken up nicely, and work great for tenderizing and making flaky all sorts of baked goods. Use wherever buttermilk is called for!
