Hi Heather- posted this on the wrong board before, I think. Anyway, I would like to make the Brown Sugar Banana Bread recipe in your book but am concerned about the 'black bananas' . Mine are quite dark but look mushy and I"m worried they are spoiled and will make me sick. Any suggestions?? Thanks-Linda

Hi - The inside of the bananas will get mushy as they become over-ripe. The outsides will be very dark. It sounds like your bananas are ready, so go ahead and use them. If they're rotten they'll be moldy, and you can't miss that.

Thanks Heather! I made the bread after reading your reply. It came out pretty good, though I had to guess on the amount of egg whites. I couldn't find organic egg whites and had to settle for liquid bottled kind. They only gave amount to use to equal one whole egg, so I had to estimate. I think I'd add a little more next time to make it even moister.

Hi - For the egg white liquid, the amount they give that's equal to one whole egg should also equal two egg whites.

Yes, if they're pretty finely chopped (no big chunks) and you don't add too much. Stick to 1/4 to 1/3 cup per loaf at most.
