wheat gluten???

is wheat gluten ok to eat? i have a feeling it's not, but would like a definite answer. as a vegetarian, i've been trying to use more "meat" substitutes and wheat gluten is in many of them.

Actually, it's perfectly okay. Wheat gluten is just a protein from wheat - there's no fat or insoluble fiber. Gluten intolerance (such as celiac) is a completely different thing from IBS. Some people have both, but there is no reason for gluten to be a trigger for just IBS. I use gluten for meat substitutes in Chinese recipes and it works great.

If you're not allergic to wheat, and you don't have celiac, you should do just fine with gluten.
