hi

i'm going to do some baking and need to know the exchange rate for applesauce in substitution for oil. for example if a recipe calls for 1/2 cup oil can i use 1/2 cup applesauce? do i need more or elss applesauce? or exchange or use 1/4 cup of each?

also what type of applesauce is good, swetened or unsweetened?

thanks
amy

Hi - Use unsweetened applesauce. I typically reduce the oil called for in a recipe by 2/3rds, so I replace 2/3rds of it with applesauce. I don't usually use less than 1/4 cup oil per loaf in baking things like breads and cakes because I don't think the result is as good. But some folks on the board replace all of the oil with applesauce.

So, you might want to experiment a bit!
