Safe Pumpkin Pie question

Now that Thanksgiving is over and I passed on all the pies and other delicious looking food that would make me sick... I am having major cravings for pumpkin pie.
Can you use the recipe on the Libby Pumpkin Pie mix can and just substitue soy milk for the evaporated milk?
Also is there a safe crust?
Your ideas are welcome - I've tried tofu versions of pumpkin pie and cheesecake and just didn't care for them.

I am not real sure but I was going to make a pie like that with non dairy milk and with a lighter but somewhat normal crust. At the end of a low fat meal the crust I thought would still be ok. I never looked up any recipes because I ended up not making the pie but I was going to try Cooking Light archives, but a google search for low fat pie crust would work.

This is the first year I made the 5 minute pumpkin pie and all I can say is WOW!!! good thing I made two. Have to limit myself to a skinny slice each day or I would devour the whole thing. Husband liked it too, he is non-IBSer but willing to try my new recipes.

Me too, and yes, my hubby likes it as well. I used crushed nuts for the crust since I have to eat GF. I've used GF dried bread crumbs and that's good too. Who'd have ever thought something so yummy could be so safe! (now to stock up on the canned pumpkin while it's cheap so I can make it all year)
