Heather's Peppermint Fudge Cake--- disappointed

I made the almond version of this recipe to take to a Thanksgiving meal with friends. The cake was kind of dry & not really very sweet. I was so disappointed because I wanted to impress everyone. Boohoo....

Maybe I'll add more applesauce next time & put more icing on it. I'd wanted to make the peppermint version for a potluck at work, but something's got to improve if I'm gonna do that!

I made it and mine was really moist, did you overcook it?
The recipe doctors will no doubt check in here to give advice, but I'd say if anything mine was too much the other way!

Yeah... I can't imagine that cake being dry, from the couple times I've made it, and I even overbaked it once. Hmm. The only thing I can figure is that I add a little water to the recipe, because the batter itself seems dry to me - maybe that would make a difference?

I overcooked it once... it was dry.. but I don't add water and its fine most of the time.. the complaint I've had is the mint is too strong when I make it per recipe... also- one brand of applesauce makes it a bit less moist then another... so that could be it..

I was really disappointed too! Mine was just a bit dry but the peppermint was overwhelming! You couldn't even eat it as it was so strong. I thought about cutting back on the peppermint but I didn't think I'd still like it so I'll just continue to eat my Betty Crocker brownies cause they really don't hurt my belly. Was just gonna try Heather's since all ingredients were IBS friendly

Ahh, good point about the applesauce... the one I use is Musselman's (or however you spell it) unsweetened, and you can actually pour it from the jar, it's so liquidy. Maybe that makes a difference.

they all pour really well... but I'll have to check which is theone I used last night I know it wasn't my normal musslemans because DH bought something else on sale... he knows better thent o get meijers unsweetened- the only thing its good for is baking and thats with added sugar... its very TART!

I noticed that the batter was very thick, so maybe I should have added more water or more applesauce. I used the Walmart brand unsweetened applesauce. It pours from the jar, but maybe it's not as good as the Musslin's.

I will also say that I used the almond extract instead of the peppermint, & the almond flavor is really too strong, too. I'll remember to cut down on the flavoring next time & too add more moisture.

It's possible that I overcooked it a little bit. I have a new oven that I'm still getting used to. But usually baked goods turn out lovely.

My mom made it for me and followed the recipe to a 't' and it turned out super moist and very yummy. I liked it a lot.

Check your oven temperature - odds are it was overbaked. -nt- new
