frying tofu

hello,

i was wondering how does one pan fry tofu? i'm use to the tofu at most chinese places that looks deep fried, so i need to learn how to pan it. do i use pam, a little bit of canola, or ??????? i want it to remain firm and not fall into a million pieces.

Make sure that you buy the extra firm. I use a bit of sesame oil or PAM spray and just cook it until it warms through. You might want to add some soy sauce or something for flavor as Tofu has none of its own. Good luck!

Yep, use Pam and a nonstick skillet. You'll need fairly high heat, and it will take a surprisingly long time to brown on the bottom. Start with firm or extra firm tofu, and it won't fall apart.
