Double Decker Sweet Potato Pecan Pie

Friday is my husband's 30th birthday and every year I make his favorite dessert, pecan pie. This year I would like to make him something I can also eat, since I too love pecan pie. My problem with this recipe is my husband and I hate sweet potatoes. We had a bad incident when Madeline was about a year old and all three of us got really sick. I knew you would want to know that. Anyways, is there something I can substitute for the potatoes or should I run to the local bakery and pick up a little pecan tart for him?

Hi - You can use canned pumpkin instead - that works great. You could also omit the potato layer and double the pecan layer quantities. Then you'll end up with just a (very big!) pecan pie.
