Chinese Sweet Corn Soup

Has anyone made this recipe from the Eating for IBS book? I plan on making it this week and was just curious. My husband is a bit scared when I try new things and I want to reassure him! Also, if you HAVE made it, did you use the Mirin? I can't seem to find it and wondered if I could use Sake? Thanks!

Yeah I've made it - without the crab or whatever it was because I'm vegetarian. I didn't use mirin (I have some now but I didn't at the time) - I used sherry instead. I really liked it as I used to get it at a chinese restaurant. I always wondered how they made it. One thing to be careful of is to drizzle the egg white in very slowly as you stir otherwise you end up with blobs instead of stringy bits.

Ok! Thanks! I forgot that I could use the sherry. I will have to pick some up. I guess that it is similiar to Egg Drop Soup? Glad to hear some positive feedback!

Hi there! Just thought I'd let you know that I've cooked the soup many times and thoroughly enjoyed it. I'm also a big crab fan, so I especially loved it...and the creamy corn makes it mmmm mmmm good! I've also used the mirin, but am sure that it would taste equally good with sherry or other similar cooking wine

Hi there - To make your husband feel extra safe, serve the soup over lots of white rice - that will give an extra buffer of soluble fiber.

Just wanted to let everyone know that I made this on Friday! WOW! It was really good! Thanks Heather; your recipes are awesome! I wish I could be as creative with food! ( My husband even liked it....and I have PLENTY for leftovers!) Thanks again!
