Safe Strawberry Pie

Since strawberry season is coming up for a lot of us, I thought I'd post my "safe" recipe.
Graham Cracker Crust - use your own recipe or:
melt 1/3 cup margarine in pie plate
add 1/4 cup sugar and 1 1/4 cup graham cracker crumbs. Mix well and press into pan. You can microwave it on medium for a couple of minutes to "set" it.

Filling:
1 cup brown sugar
1 cup water (+1/4 cup if needed)
2 tbsp cornstarch
pinch salt
1 tbsp lemon juice
1/2 pint mashed fresh strawberries
Mix all of these together and thicken on medium in a pot.
When thick add the rest of the pint of sliced strawberries and pour into pie crust. Chill 2 hours before serving.
If you have trouble with raw strawberries, you can finely chop or puree the second half of the pint to make it easier to digest.

im really not good with strawberries- are there any other kindof fruity fillings i can use?

Hi - Try peach or apricot - they're usually very safe, especially if you peel them. Check here web page for a peach cobbler recipe that explains how to peel fruit like this.
