Should I use soft or firm silken tofu to make these? I've never used Tofu before so I didn't know which was better.

As long as it's silken it should give you the silky/creamy texture you want. If you have a choice, I'd go with firm. Just make sure to drain either type according to the recipe instructions, or the filling can be too wet.
