She discussed carbohydrates and lactose today.
A student asked her what she thought of the Atkins diet and boy did she have an opinion about it. She explained how harmful the diet is to our body and basically if anyone sticks with the diet for long term can actually die. She compared it to Diabetes and explained the process of how Diabetics are unable to process carbohydrates and eventually they die from not processing carbohydrates. Besides the amount of fat put into their body is more harmful than carbs.
She also discussed the controversy about dairy and she believes we consume too much of it and our bodies don't need it. She said 2/3 of the world population is lactose intolerant. Than she said if any of you want to write your paper about the controversy of dairy that it will be a good paper to write. I have decided to write about how dairy affects our body.
I have to write a scientific paper and I like to know if you have any good websites discussing dairy. If so could you please send them. Thanks!!!

Wow, you're right. I do love her!
For good dairy info, check the pcrm.org web site. All of their info is really well-researched and they cite their sources.
You can also check the book Diet for a New America (lousy title, great book) by John Robbins. A new edition of that just came out - the original is from 1987, and still in print. It's a terrific book and what's amazing is that for something crammed with technical info it reads almost like a novel you can't put down.
I'd also look for books by Dean Ornish and/or James McDougall. They'll have great info with good references.

VEEERRRRY interesting post! Thank you for sharing.
I'm amazed that Atkins has become so popular. Before Atkins, WAAAY before Atkins -- well, actually, the year was 1968 -- it was called "Martinis & Whipped Cream." My hubby and I went on it for several months. I lost 30 pounds. It was the same as Atkins, except all the booze you wanted to drink -- lots of cheese, whipped cream, red meat. No vegetables, no fruit, no bread of any kind.
After 3 months I couldn't poop. Neither could Don. I remember sitting on the pot once for a half hour, trying to force it. No luck. WEEKS went by (now bear in mind that I'm a "D" person), and finally -- FINALLY -- I was able to "perform". It was the most painful experience -- I delivered a 5-pound football and practically split my butt wide open.
That was the end of the martinis and whipped cream.

Oh my .... Bev, I just love ya!!!! lol lol lol!
I know this agony only tooo well. I grew up thinking it was normal to go to the toilet only twice a month, to get a dull ache in my back every time I leaned over (despite being somewhat of an athlete!) I was 22 years old before a colleague at work (bless him!) asked how many times a day I went to the toilet. "A day????" I said, "try once a fortnight, maybe once a week if I'm really lucky". I can still see his face now - his eyes nearly popped right out of his head! It was then I realised I wasn't a saddo for feeling rotten all the time...I WAS SICK!!
The only good thing about collecting and storing all your poop like that inside for such a long time.....the tremendous relief when you finally go. It's like nothing else on this earth. LOL! Shells

OMG yes! Can you imagine how all of us would do without her? I think of that quite often -- just think of how many of us are reaching out for help. I don't know what we'd all do without her.
Don't tell anyone. Lets keep her to ourselves.
