I don't think it's something docs would normally do for diagnosis. I've also seen PET scans of brains of people who have IBS, and they look quite different than PET scans of people without IBS. You might be able to just call them and ask what they would suggest for resources, help, etc. to prove your case. You can also get hard core research abstracts from the NIH at pubmed.com - just search for IBS or irritable bowel and you'll find tons of helpful studies.
