I'm a bit confused because I thought I read you can't eat corn but then I read you can eat corn cereals? Is it just pop corn you can't eat because it's tough? I wasn't sure if I had to avoid corn starch and maise?

Hi - it's the insoluble fiber in corn that's trouble. Kernel corn and popcorn will be very likely triggers - be careful.

Corn that has been finely ground into cornmeal, corn flour, etc. should be just fine. So polenta, corn cereals, etc. can be good staples.

Treat whole corn kernels as caution foods - check here http://www.helpforibs.com/diet/fiber2.asp
