I'm a little confused, in the book and on the "cheat sheet" you state not to use whole wheat bread only white, French, sourdough or pita bread. Every loaf of bread I picked up to look at says ingredient is wheat flour enriched? Is this ok as long as it doesn't say whole wheat? Also, a little confused about white type of fish I can eat as I much prefer that over poultry for protein. Been eating nothing but white rice and red potatoes and it's getting a little old.

Check here http://www.helpforibs.com/diet/faq.asp#wheat for an FAQ about this - they're not the same thing.

Any kind of seafood should be fine - shell fish, fin fish, etc.
