Substitution for coconut milk?

Hi, Does anyone have advice on what to substitute for coconut milk when baking? Is soy milk sufficient? Or, would using light/lowfat coconut milk probably be ok? Thanks!

I use low fat coconut milk from time to time with no ill effects.

I use it all the time. Its a great dairy sub like in creamy soups or baking etc. Just make sure the rest of the recipe is FF. Generally light coc milk has 3 grams of fat per 1/4cup

of unsweetened soy milk and a dash of coconut extract (sold in grocery stores by the vanilla extract).
