I need some new (easy) lunch ideas for at work.....

I was eating turkey sandwiches on french bread for a while...then I got tired of those.....so I started eating cheese quesadillas (cheese, and salsa on a flour tortilla heated in the microwave)....but now I'm tired of those....what do you take to work with you for lunches? Any ideas?

Have you tried tuna-in-a-pouch? It really DOES taste fresher than canned! It's absolutely YUMMY. AND -- who needs mayo? Okay, it's expensive, but you're worth it.
I don't work anymore, thanks to this damn IBS (I still don't know how you guys do it!), but when I DID work, I used to grab a container of frozen soup out of the freezer on my way out the door; by lunch time it was defrosted, and all I had to do at work was microwave it for a minute. Yeah, I planned ahead and made a big pot of soup the weekend before and froze it in individual containers -- but this was a cheap and easy fix for lunches for me, and I knew it was nutritious as well.
I also used to make huge pasta and broccoli salads or Chinese chicken cabbage salads on the weekends and take individual servings to work during the week -- until I realized it was one of the main irritants of my IBS. Anyway, something you can make on the weekend and put into individual containers for the week makes sense to me.

Hi, how about white pasta? You can cook a whole pot at home and have many pasta lunches for the work week. You can add a little olive oil, garlic, spices.... If your tummy is doing well you can add in tuna, salmon, chicken, turkey, tofu.... I know, it`s a real pain to figure out what to bring for lunch each day. I also sometimes make chicken breast or fish for dinner with a baked potato or rice and bring the leftovers to work for lunch. Leftovers make amazing easy lunches, I eat them cold at my desk or warm them in the microwave in the company kitchen. The idea is to make a bigger dinner but only eat half of it so you have the other half left over for lunch. Better than eating the same old turkey sandwich every day! Also, you can make your own tummy-friendly soups and bring them to work in a thermous with a big piece of sourdough bread or a baguette. Cheers.

I find I take a lot of leftovers for lunch. I also like to make a pasta salad one night for dinner, maybe have it with turkey burgers, and then I have leftover pasta salad for lunches. Sometimes I will add tuna to it for more protein.

Ha! We answered almost the same thing concerning work-lunches. Trust me, sometimes it is so hard to work with IBS. Sometimes I spend most of the morning not at my desk but in the bathroom! Sometimes I am late for work or have to leave early. And I am always tired! Anyway, I am just lucky that I like my job and that working actually takes my mind off my stomach. I am also lucky I am able to drink my teas all day long at my desk. Cheers!

When my school starts up next week, my schedule is going to become very crazy on Mondays and Wednesdays! On those two days, I'll be up at 5:00am to get to work at 7:00am; then I'll leave work at lunch time from 11:30am-1:30pm to attend a class; then I'll leave work at 5:00pm at the end of the day to attend a 6:15pm class that lasts till 9:30pm. Eating is going to be very hectic on these days.
I looked over the lunch ideas from the past, but noticed a lot of them have to be microwaved. I need lunch and dinner ideas that do not require a microwave that I can pack in the morning (and won't go bad with an ice pack in my lunch bag by the end of the day!).
My boss won't let me eat anything that smells (or looks like a whole meal) at my desk since she says the aroma fills the office too much. Also, I will probably be eating a lot of my meals in the car. There are cafeterias at the school and I might be able to use a microwave for my night class, but definitely won't have time during my day class.
Here's what I have so far:
- Tuna Sandwich
- Turkey Sandwich
- Pasta Salad
Any other suggestions would be great! This schedule goes till May and I will probably get sick of those three things by the time school ends.

Potato salad, I like 3 bean salad if you can handle the insoluble fiber. How about roll-ups with hummus?
Cold chicken tacos aren't bad. Cook up some chicken with taco seasoning, chop it up, load it in a shell with soy/rice cheese, sour cream and lettuce-fold it up burrito style and yum!
OK, hungry now, time for lunch!

Thanks for the ideas, Michelle! Although my stomach doesn't handle the beans or potato salad too well, I will definitely look into the chicken taco and hummus ideas.

Finding something to take to work every day for lunch can be a full-time job! I like to take pita sandwiches--tuna, turkey, chicken, you name it. They're easy on the tummy (and filling) and easy to put together--you can eat them hot or cold. To give it an extra kick, I sometimes add a little bit of fat free soy cheese.
When sandwiches start to get me bored, I sometimes will have bagels with cream cheese, soup (kinda hard if you don't have a microwave, though) and tuna salad on crackers.

well this one is not non microwave..but if you have a campbell's thermos it will work for you. I have been taking soup and a big roll or piece of french bread. If you look you will find many soups that are very low in fat (chicken rice or chicken vegetable) and the veggies are pretty soft cooked so they dont bother me. i have been just about living on soups lately....

There are good instant soups too! I get some that come in their own cup - there are nice organic varieties out there. All I do is get hot water from the coffee machine, stir them up, and wait 5 minutes. I'm a big fan of the miso soups, as well as the lentil and couscous soups (a little on the high fiber side, so these get eaten only when I feel pretty stable).
There's also instant mashed potatoes in a cup - very good for those less stable days!

This sounds pretty good. I think I have a recipe to make pita bread too that I can use. I don't like buying bread at the store anymore since I got my breadmaker! Thanks for the idea!

Thanks, Astrochick - but these containers aren't really stable if I need to eat them while driving. This is a good idea, however, for my dinner problem as I can keep a few in the car incase I ever run out of time to pack a dinner for my night class. I can search out some hot water in the cafeteria. Thanks!
