Well caramel candy is made from sugar, butter and milk plus other ingredients. It is quite high in fat.

I won't be surprized to see HFCS in commerical ones. I have seen recipes that don't use butter but they probably add another oil. I suspect someone has figured out a recipe that substitutes soy for the milk.

Personally I won't eat them.

I just got my braces off after THREE YEARS, and my orthodontist gave me a caramel apple! Does this mean I have to give it to DH?

Caramel is one of my weaknesses and I pay dearly for it each and every time I indulge!

I've wondered for a while if you couldn't make IBS safe caramels with soy milk and caramelized sugar. Haven't yet tried it, but someone else might have.
