Great Key Lime Pie

Great Key Lime Pie
(Makes 6-8 servings)
I can't believe this is vegan. It's so rich and decadent it almost tastes more like key lime cheesecake!
1 pkg Mori-Nu firm silken tofu (I used lite)
8 oz soy cream cheese
1/2 cup key lime juice
2 teaspoon freshly grated lime rind
2 pkgs Mori-Nu Mates vanilla pudding mix (has to be this brand--it goes with the tofu)
1 tablespoon liquid sweetener (to taste--I used honey even though that's not vegan )
1 prepared 9" or so pastry or graham pie crust (I used Keeblers reduced fat graham cracker crust)
1. Drain any excess water from the tofu.
2. Blend tofu and lime juice in a processor or blender until creamy and smooth.
3. Add the rest of the ingredients (except crust!), and blend again until smooth.
4. At this point, I had to transfer the mixture to a bowl and beat on high speed with an electric mixer, since it was too thick and stiff for my blender.
5. Pour the mixture into the crust and chill 2-3 hours or until firm.
6. This sets up very firm.
7. It also makes a great pudding or little tartlet filling for fancy desserts!
8. Enjoy! You won't believe it's IBS-safe!

OOOH! Sounds yummy! I just got back from Key West where I cheated had a piece of "real" Key Lime Pie!
This one sounds great! Where do you get the soy cream cheese? Does it come in the 8 oz brick? All I can find near me is the soft soy cream cheese in a little tub container.

I made it today. I had extra batter left over (is that normal?) and it doesn't seem to be firming up (how firm is it supposed to be--like pudding or like cheesecake?). THNX!

Hi Shanna! I'm glad this sounded so good to you. I didn't have any extra batter, but I did fill up the pie shell as full as it would possibly get. As for the firmness, mine was quite firm. Maybe yours didn't firm up because you used regular lime juice? The reason I'm wondering is that this was one of the reviews on VegWeb:
This pie turned out really good, however, I wasnt able to find key lime sauce so I settled on sweetened lime juice. The only problem I had was that it wasnt really firm. Kinda hard to take an individual slice but that may be because I used lime juice. But it tastes great!
As for using regular lime juice, I hope it works out for you! This is what another reviewer said about that after someone else asked:
I think key limes are just a bit sweeter than regular limes. Make it with regular lime juice, and then taste it to make sure it's not too tart. If so, adjust your sweetener to your tastes. Good luck!
Anyway, I hope it ended up working out for you. If not, you really should try it with the key lime juice sometime... it's amazing!!

Hi Brenda! I hope you like it! I get Tofutti Better than Cream Cheese, which does come in a tub rather than a brick.

Thanks! I will use key limes next time. Also, I recommend browning the crust in the oven for 5 min. on 375 deg. F after coating it with a bit of cooking spray, adding a little extra honey or sugar, and topping it with a dairy-free whip topping (Hip Whip, Cool Whip, etc). Thanks for the recipe!

I believe all Cool Whip is dairy-free. I think Heather has said all the artifical ingredients have bothered her, but I use Cool Whip once in a while and it's never bothered me.
