Funny...I didn't care for it when it just came out of the oven but I have been nibbling on it for a couple of days and I think it get's better as it sits a while. I could eat it every day and like Heather...I eat it for breakfast!
Do y'all sprinkle anything on top of the cake or eat it as is?

I drizzle it with the glaze that's in EFI... I think it's mint mocha fudge. Yummy!

As long as Heather doesn't mind, here it is:
Mocha Mint Glaze
1/2 cup confectioners' sugar 2 Tbsp unsweetened cocoa powder 1/2 tsp decaf instant coffee powder 1 1/2 Tbsp water or soy or rice milk 1/2 tsp peppermint extract
Sift sugar and cocoa into medium bowl. Dissolve coffee in 1 Tbsp of the water or milk and add the peppermint extract. Gradually whisk coffee liquid into dry ingredients. Whisk in additional 1/2 Tbsp of water or milk if necessary. Use glaze immediately to top bundt cake (if glaze sits it will harden).

I just made the cake for the first time, and I think I'm in love. I'll probably end up eating it up before I have a chance to make a glaze for it, but... next time!

Between the boyfriend and myself, the cake is half gone already! It never even cooled! Hehe. Now, to be fair, I did cut the recipe in half, since all I have is a loaf pan... but still... it's rare that baked goods disappear THAT quickly here!

about this cake. A few weeks ago, maybe even a month ago, I had a dream that I was making this cake and I couldn't decide which flavor to make it. Maddie hates peppermint so I usually use almond or orange extract. The rest of us don't care and I even think my hubby likes the peppermint flavor. I decided in my dream to make it with peppermint and then woke up.
Well, I told my hubby about the dream and he asked if I was going to make it. Well of course I had to make it. I had a dream about it so now I am craving it. I ended up making it peppermint and Maddie was so disappointed. The bad thing is it was gone before dinner the next night and I ate most of it . Those crazy pregnancy dreams and cravings.
